It is a valuable source of proteins and polyunsaturated fatty acids, mainly of the omega 3 series, which, within an active and healthy lifestyle, can help reduce the levels of bad cholesterol in the blood (LDL).

Good and healthy, cod can be used to make many recipes: steamed, baked, grilled.

A preparation that, given the cooking method and the breading used, alters the precious nutritional properties of this fish, transforming it from a food rich in nutritional properties, to a preparation that is difficult to digest, rich in saturated fats.

So why don’t we turn it into healthy street food?

To make this recipe, use fillet of cod fish.

The crunchy and golden breading made with oat flakes, almonds, oilseeds and chopped parsley, obtained by wetting the frozen cod hearts in a batter of water and chickpea flour, further enriches the nutritional value.

Furthermore, the use of spices such as parsley brings very useful substances such as vitamin C, while cooking in the oven reduces the lipid profile.

The result is a fillet of cod fish that is crunchy on the outside and soft on the inside, so good it is loved by young and old.

Accompany it with many seasonal vegetables cut into sticks, breaded in craved corn flour and baked in the oven after steaming them with olive oil.

Breading ingredients:

  • 3 spoons of chickpea flour
  • 90 g water
  • 1 spoon of oil
  • 2 tablespoon of mixed leosis seeds (poppy, sesame, flax)
  • 2 spoons of unpeeled almonds
  • 4 tablespoons of small whole grain oats
  • parsley

Cod ingredients:

  • 4 fillet of cod fish
  • olive oil

Method

Get the fillet of cod fish – 4 pieces.

Weigh and prepare the chickpea flour, water, oil, almonds, oat flakes and oil seeds

Prepare a batter based on chickpea flour, water and oil. Chop the almonds, parsley, and add them to the small whole meal oat flakes and the oil seeds. Mix evenly.

Dip the cod first in the chickpea flour batter and then in the prepared breading.

Place the breaded cod on a baking sheet lined with parchment paper.

Sprinkle with olive oil and bake in a preheated oven at 180 ° C for about 15/20 minutes.
